Curried Lamb With Rice Ring
Ingredients
- 2 boiled lamb breasts, meat cut from bones
- Butter
- 1 chopped onion
- 1 tablespoon flour
- 2 teaspoons curry powder
- White stock or water
- Salt and pepper
- Minced parsley
- Grated lemon peel
- Plain boiled rice
Method
- 1 Cut meat from two boiled lamb breasts and brown in butter with a chopped onion.
- 2 Add 1 tablespoon flour and 2 teaspoons curry powder; mix thoroughly.
- 3 Add enough white stock or water to make sauce. Season with salt, pepper, minced parsley, and grated lemon peel. Simmer covered until done.
- 4 Skim off fat. Fill a buttered border mold with plain boiled rice, press firmly, and turn out onto a hot platter.
- 5 Pour the curried lamb into the center of the rice border and serve.
