Curried Lamb With Rice Ring

Ingredients

  • 2 boiled lamb breasts, meat cut from bones
  • Butter
  • 1 chopped onion
  • 1 tablespoon flour
  • 2 teaspoons curry powder
  • White stock or water
  • Salt and pepper
  • Minced parsley
  • Grated lemon peel
  • Plain boiled rice

Method

  1. 1 Cut meat from two boiled lamb breasts and brown in butter with a chopped onion.
  2. 2 Add 1 tablespoon flour and 2 teaspoons curry powder; mix thoroughly.
  3. 3 Add enough white stock or water to make sauce. Season with salt, pepper, minced parsley, and grated lemon peel. Simmer covered until done.
  4. 4 Skim off fat. Fill a buttered border mold with plain boiled rice, press firmly, and turn out onto a hot platter.
  5. 5 Pour the curried lamb into the center of the rice border and serve.
