Curried Fish And Apple Stew
Ingredients
- 1 lb cooked white fish
- 1 apple, sliced
- 2 tbsp butter
- 1 onion, sliced
- 1 cup fish stock
- 1 tbsp curry powder
- 1 tbsp flour
- 1 tsp lemon juice or vinegar
- Salt and pepper to taste
- 1 pinch sugar
- 6 oz rice
Method
- 1 Slice the apple and onion. Brown them in a pan with a little butter.
- 2 Stir in the flour and curry powder. Add the stock by degrees and skim when boiling.
- 3 Simmer slowly for 30 minutes. Stir in the lemon juice and a pinch of sugar.
- 4 Strain the sauce and return it to the saucepan.
- 5 Cut the fish into neat pieces and add to the saucepan until hot.
- 6 Serve hot with a border of cooked rice.
