Curried Eggs With Rice

Ingredients

  • 1 sliced onion
  • 1 tsp curry powder
  • 1 tbsp flour
  • ¾ cup water, milk, or coconut milk
  • 6 hard-boiled eggs, halved lengthwise
  • Rice, for serving

Method

  1. 1 Fry the sliced onion with 1 teaspoon curry powder.
  2. 2 Add 1 tablespoon flour to make a smooth gravy.
  3. 3 Stir in ¾ cup water, milk, or coconut milk and cook until thickened.
  4. 4 Add six halved hard-boiled eggs and serve with rice.
