Curried Eggs With Apples And Nuts

Ingredients

  • 2 tbsp Crisco
  • 6 hard-cooked eggs
  • 1 small chopped onion
  • 1 chopped sour apple
  • 2 tsp curry powder
  • 1 lemon
  • 4 chopped butternuts or 6 chopped almonds
  • 3 tbsp cornstarch
  • 2 cups milk
  • 1/2 tsp salt
  • croutons

Method

  1. 1 Boil eggs until hard, peel, and place in cold water until ready to use.
  2. 2 Fry onion in Crisco for a few minutes, then add curry powder, apple, nuts, and cornstarch moistened with milk.
  3. 3 Simmer for 15 minutes, stirring occasionally. If too thick, add a little white stock or water.
  4. 4 Cut eggs in halves and lay them in the sauce with salt to heat through.
  5. 5 Place eggs in a deep hot dish, strain the sauce over them, and garnish with croutons and lemon slices.
