Curried Egg Yolk Spread
Ingredients
- 8 egg yolks, hard-boiled
- 1 egg-sized piece of butter
- Salt to taste
- 1 tsp curry powder
- 1 tbsp fine breadcrumbs
- Tarragon vinegar, as needed
Method
- 1 Pound together the hard-boiled egg yolks, butter, salt, curry powder, and breadcrumbs until combined.
- 2 Continue pounding until the mixture forms a smooth paste.
- 3 Moisten the paste with a little tarragon vinegar to reach desired consistency.
