Curried Egg Salad Sandwiches
Ingredients
- 4 eggs
- 4 tbsp melted butter or olive oil
- ½ tsp salt
- 1 tsp onion juice
- ½ tsp curry powder
- 4 slices bread, sliced thin
- Butter for bread
Method
- 1 Hard boil eggs. Remove yolks from whites; chop whites very finely and press yolks through a sieve.
- 2 Gradually add melted butter (or olive oil), salt, onion juice, and curry to the yolks. Rub until smooth.
- 3 Spread thin bread slices with a thin layer of yolk mixture, then top with chopped whites.
- 4 Cover with another slice of buttered bread. Press together, trim crusts, and cut into shapes.
