Curried Egg Salad Sandwiches

Ingredients

  • 4 eggs
  • 4 tbsp melted butter or olive oil
  • ½ tsp salt
  • 1 tsp onion juice
  • ½ tsp curry powder
  • 4 slices bread, sliced thin
  • Butter for bread

Method

  1. 1 Hard boil eggs. Remove yolks from whites; chop whites very finely and press yolks through a sieve.
  2. 2 Gradually add melted butter (or olive oil), salt, onion juice, and curry to the yolks. Rub until smooth.
  3. 3 Spread thin bread slices with a thin layer of yolk mixture, then top with chopped whites.
  4. 4 Cover with another slice of buttered bread. Press together, trim crusts, and cut into shapes.
