Curried Egg And Cheese Pudding
Ingredients
- 1 cup bread crumbs
- 1/2 tsp fresh thyme, chopped
- 1/2 tsp fresh parsley, chopped
- 1 tsp curry powder
- 2 hard-boiled eggs, chopped
- 2 oz cheddar cheese, broken into small pieces
- 2 oz butter, melted
- 1 cup warm milk
- 2 raw eggs, beaten
Method
- 1 Combine bread crumbs, thyme, parsley, curry powder, chopped hard-boiled eggs, and cheese in a bowl.
- 2 Melt butter in warm milk, then stir in beaten raw eggs. Pour this mixture over the bread crumb mixture and let soak for 30 minutes.
- 3 Pour into a baking dish and cover with a plate. Bake at 300°F for 45 minutes.
- 4 Remove the plate and continue baking for another 45 minutes until the top is browned and the pudding is set.
