Curried Egg And Cheese Pudding

Ingredients

  • 1 cup bread crumbs
  • 1/2 tsp fresh thyme, chopped
  • 1/2 tsp fresh parsley, chopped
  • 1 tsp curry powder
  • 2 hard-boiled eggs, chopped
  • 2 oz cheddar cheese, broken into small pieces
  • 2 oz butter, melted
  • 1 cup warm milk
  • 2 raw eggs, beaten

Method

  1. 1 Combine bread crumbs, thyme, parsley, curry powder, chopped hard-boiled eggs, and cheese in a bowl.
  2. 2 Melt butter in warm milk, then stir in beaten raw eggs. Pour this mixture over the bread crumb mixture and let soak for 30 minutes.
  3. 3 Pour into a baking dish and cover with a plate. Bake at 300°F for 45 minutes.
  4. 4 Remove the plate and continue baking for another 45 minutes until the top is browned and the pudding is set.
