Curried Creamy Oysters On Toast

Ingredients

  • 1 pint oysters, parboiled and drained
  • ½ cup cream
  • 2 tablespoons butter
  • 1 tablespoon flour
  • ½ cup oyster liquor
  • ½ teaspoon curry powder
  • ½ teaspoon chopped onion
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Method

  1. 1 Cook onion and butter in a saucepan for a few moments.
  2. 2 Mix flour and curry powder, then stir into the butter until frothy.
  3. 3 Add oyster liquor and bring to a boil.
  4. 4 Stir in salt, pepper, and cream.
  5. 5 Add oysters and heat thoroughly.
  6. 6 Serve on buttered toast or crackers.
