Curried Creamy Oysters On Toast
Ingredients
- 1 pint oysters, parboiled and drained
- ½ cup cream
- 2 tablespoons butter
- 1 tablespoon flour
- ½ cup oyster liquor
- ½ teaspoon curry powder
- ½ teaspoon chopped onion
- 1 teaspoon salt
- 1/8 teaspoon pepper
Method
- 1 Cook onion and butter in a saucepan for a few moments.
- 2 Mix flour and curry powder, then stir into the butter until frothy.
- 3 Add oyster liquor and bring to a boil.
- 4 Stir in salt, pepper, and cream.
- 5 Add oysters and heat thoroughly.
- 6 Serve on buttered toast or crackers.
