Curried Cream Cheese And Nut Sandwiches
Ingredients
- 8 oz Neufchatel or Philadelphia cream cheese
- 1 pimiento, chopped fine
- 12 almonds, ground
- 12 pecan meats, ground
- 1 tbsp tomato catsup
- 1 tsp curry powder
- 2 tbsp desiccated grated coconut
- Olive oil, as needed
- Thin white bread slices
Method
- 1 Rub cream cheese to a paste in a bowl.
- 2 Mix in pimiento, ground almonds, ground pecans, catsup, curry powder, and coconut.
- 3 Add olive oil gradually until the mixture forms a smooth, spreadable paste.
- 4 Spread the mixture between thin slices of white bread without buttering.
- 5 Trim crusts and cut sandwiches into long fingers. Serve with lettuce salad.
