Curried Corn, Apple, And Walnut Sauté
Ingredients
- 1 can corn
- 1 tart cooking apple
- 1 tomato
- 1 tsp finely chopped green pepper
- 1 tsp grated onion
- 1 tsp curry powder
- 1 tbsp chopped Brazil or English walnuts
- 2 tbsp butter
- salt and pepper to taste
Method
- 1 Melt butter in a skillet. Add diced apple and grated onion, frying until brown.
- 2 Stir in curry powder, chopped green pepper, tomato, and walnuts. Simmer for a few minutes.
- 3 Add corn and cook gently for 20 minutes. Add a little water if too thick.
- 4 Serve in a shallow vegetable dish or on a platter.
