Curried Cod With Coconut Sauce

Ingredients

  • 2 lbs cod
  • 1/4 cup Crisco
  • 2 cups white stock
  • 1 tablespoon flour
  • 2 teaspoons curry powder
  • 1 medium onion, sliced
  • 1 tablespoon lemon juice
  • Salt, pepper, and red pepper to taste
  • 2 cups plain boiled rice
  • 2 tablespoons chopped coconut

Method

  1. 1 Wash and dry the cod, then cut into 2-inch squares.
  2. 2 Melt Crisco in a saucepan and lightly fry the cod pieces. Remove and set aside.
  3. 3 In the same pan, fry sliced onion, flour, and curry powder for 10 minutes, stirring continuously.
  4. 4 Stir in stock and coconut, bring to a boil, then simmer for 20 minutes. Strain and return to pan.
  5. 5 Add lemon juice and seasonings. Bring nearly to a boil, add fish, cover, and cook slowly for 30 minutes.
  6. 6 Serve the cod over plain boiled rice.
