Curried Cod With Coconut Sauce
Ingredients
- 2 lbs cod
- 1/4 cup Crisco
- 2 cups white stock
- 1 tablespoon flour
- 2 teaspoons curry powder
- 1 medium onion, sliced
- 1 tablespoon lemon juice
- Salt, pepper, and red pepper to taste
- 2 cups plain boiled rice
- 2 tablespoons chopped coconut
Method
- 1 Wash and dry the cod, then cut into 2-inch squares.
- 2 Melt Crisco in a saucepan and lightly fry the cod pieces. Remove and set aside.
- 3 In the same pan, fry sliced onion, flour, and curry powder for 10 minutes, stirring continuously.
- 4 Stir in stock and coconut, bring to a boil, then simmer for 20 minutes. Strain and return to pan.
- 5 Add lemon juice and seasonings. Bring nearly to a boil, add fish, cover, and cook slowly for 30 minutes.
- 6 Serve the cod over plain boiled rice.
