Curried Chickpea Salad With Apple And Cranberries
Ingredients
- 2 cans chickpeas, rinsed and drained
- 1/2 cup celery, diced
- 1/2 cup apple, diced
- 1/4 cup red onion, diced
- 1/4 cup dried cranberries
- 1 teaspoon mayonnaise, low-fat or vegan
- 2 teaspoons Dijon mustard
- 1/4 teaspoon curry powder
- 1/8 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- salt (optional)
Method
- 1 Add chickpeas to a large bowl and mash with a potato masher to desired consistency.
- 2 Add remaining ingredients and mix until everything is combined.
