Curried Chickpea Salad With Apple And Cranberries

Ingredients

  • 2 cans chickpeas, rinsed and drained
  • 1/2 cup celery, diced
  • 1/2 cup apple, diced
  • 1/4 cup red onion, diced
  • 1/4 cup dried cranberries
  • 1 teaspoon mayonnaise, low-fat or vegan
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • salt (optional)

Method

  1. 1 Add chickpeas to a large bowl and mash with a potato masher to desired consistency.
  2. 2 Add remaining ingredients and mix until everything is combined.
