Curried Chicken With Rice

Ingredients

  • 1 chicken, cleaned and cut up
  • Water to cover
  • 2 small onions, sliced
  • Butter
  • 2 teaspoons curry powder
  • 1 tablespoon flour
  • Cold water
  • 1 egg yolk, beaten
  • Boiled rice

Method

  1. 1 Boil the chicken in water until tender. Drain the chicken, reserving the cooking liquid.
  2. 2 Brown the chicken and sliced onions in butter in a pan.
  3. 3 Sprinkle with curry powder, then pour in the reserved chicken broth. Heat thoroughly.
  4. 4 Thicken the sauce by stirring in flour mixed with a little cold water.
  5. 5 Remove from heat, stir in the beaten egg yolk, and serve over boiled rice.
