Curried Chicken With Rice
Ingredients
- 1 chicken, cleaned and cut up
- Water to cover
- 2 small onions, sliced
- Butter
- 2 teaspoons curry powder
- 1 tablespoon flour
- Cold water
- 1 egg yolk, beaten
- Boiled rice
Method
- 1 Boil the chicken in water until tender. Drain the chicken, reserving the cooking liquid.
- 2 Brown the chicken and sliced onions in butter in a pan.
- 3 Sprinkle with curry powder, then pour in the reserved chicken broth. Heat thoroughly.
- 4 Thicken the sauce by stirring in flour mixed with a little cold water.
- 5 Remove from heat, stir in the beaten egg yolk, and serve over boiled rice.
