Curried Chicken With Lemon Juice

Ingredients

  • 2 chickens, cut into pieces
  • Water to cover
  • 1 large spoonful salt
  • ½ pound fresh butter
  • 2 cloves garlic
  • 1 large onion, sliced
  • 2-3 spoonfuls curry powder
  • Juice of 1 lemon or orange

Method

  1. 1 Place chicken pieces in a stew pan with enough water to cover. Add salt, cover, and boil until tender, skimming well.
  2. 2 Remove chicken. Melt butter in the pan and brown slightly. Add garlic and sliced onion, frying until brown, shaking the pan often.
  3. 3 Return chicken to the pan. Sprinkle with curry powder, cover, and cook until brown, shaking often.
  4. 4 Add the reserved chicken broth. Stew until tender. Finish with lemon or orange juice if desired.
