Curried Chicken With Lemon Juice
Ingredients
- 2 chickens, cut into pieces
- Water to cover
- 1 large spoonful salt
- ½ pound fresh butter
- 2 cloves garlic
- 1 large onion, sliced
- 2-3 spoonfuls curry powder
- Juice of 1 lemon or orange
Method
- 1 Place chicken pieces in a stew pan with enough water to cover. Add salt, cover, and boil until tender, skimming well.
- 2 Remove chicken. Melt butter in the pan and brown slightly. Add garlic and sliced onion, frying until brown, shaking the pan often.
- 3 Return chicken to the pan. Sprinkle with curry powder, cover, and cook until brown, shaking often.
- 4 Add the reserved chicken broth. Stew until tender. Finish with lemon or orange juice if desired.
