Curried Chicken With Apple And Mango
Ingredients
- 1 oz butter
- 1 onion, chopped
- 1 tsp fresh ginger, grated
- 1 clove garlic, minced
- 8 oz meat (chicken or beef), cubed
- 1 tbsp curry powder
- 3 cups water
- 2 cups mixed vegetables (broccoli, cauliflower, sliced apple, mango)
- Juice of 1 lemon
- 1 tsp fresh ginger, grated
- Pinch of cayenne pepper
- 2 tbsp heavy cream
- 1 tbsp all-purpose flour
Method
- 1 Melt butter in a large pot over medium heat. Add onion, ginger, garlic, and meat; fry until lightly browned.
- 2 Stir in curry powder and water. Simmer until liquid reduces to about 1.5 cups, approximately 30 minutes.
- 3 Add broccoli, cauliflower, apple, mango, lemon juice, ginger, and cayenne. Cook until vegetables are tender.
- 4 Mix flour with cream to create a slurry. Stir into the curry and simmer until thickened.
