Curried Chicken With Apple And Mango

Ingredients

  • 1 oz butter
  • 1 onion, chopped
  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • 8 oz meat (chicken or beef), cubed
  • 1 tbsp curry powder
  • 3 cups water
  • 2 cups mixed vegetables (broccoli, cauliflower, sliced apple, mango)
  • Juice of 1 lemon
  • 1 tsp fresh ginger, grated
  • Pinch of cayenne pepper
  • 2 tbsp heavy cream
  • 1 tbsp all-purpose flour

Method

  1. 1 Melt butter in a large pot over medium heat. Add onion, ginger, garlic, and meat; fry until lightly browned.
  2. 2 Stir in curry powder and water. Simmer until liquid reduces to about 1.5 cups, approximately 30 minutes.
  3. 3 Add broccoli, cauliflower, apple, mango, lemon juice, ginger, and cayenne. Cook until vegetables are tender.
  4. 4 Mix flour with cream to create a slurry. Stir into the curry and simmer until thickened.
