Curried Chicken Salad With Apple And Mandarin

Ingredients

  • 3 cups shredded cooked chicken thighs
  • 1/8 cup vegetable oil
  • 1/4 cup low-fat yogurt
  • 1 tablespoon curry powder (or more to taste)
  • 2 celery stalks, diced or sliced
  • 1 apple, cored and diced
  • 1/4 cup canned mandarin oranges, drained
  • Chopped fresh cilantro and/or basil leaves

Method

  1. 1 Place shredded chicken in a large bowl.
  2. 2 Add vegetable oil, yogurt, curry powder, celery, apple, mandarin oranges, and herbs.
