Curried Chicken Salad With Apple And Mandarin
Ingredients
- 3 cups shredded cooked chicken thighs
- 1/8 cup vegetable oil
- 1/4 cup low-fat yogurt
- 1 tablespoon curry powder (or more to taste)
- 2 celery stalks, diced or sliced
- 1 apple, cored and diced
- 1/4 cup canned mandarin oranges, drained
- Chopped fresh cilantro and/or basil leaves
Method
- 1 Place shredded chicken in a large bowl.
- 2 Add vegetable oil, yogurt, curry powder, celery, apple, mandarin oranges, and herbs.
- 3 Mix all ingredients until well combined.
- 4 Cover and refrigerate for at least one hour before serving.
