Curried Chicken And Onion Soup

Ingredients

  • good broth made chiefly of veal knuckle
  • 1 chicken or rabbit, cut into joints
  • 4-5 medium onions, shredded fine
  • 1 tbsp curry powder
  • cayenne pepper for seasoning

Method

  1. 1 Prepare good broth using a veal knuckle. Once cold, skim off the fat and strain the liquid through a sieve.
  2. 2 Cut the chicken or rabbit into joints. Fry the meat well in a pan along with the shredded onions.
  3. 3 Sprinkle the curry powder over the frying meat and vegetables, then add them to the strained broth.
  4. 4 Simmer the soup for three hours. Serve hot with a seasoning of cayenne pepper.
