Curried Chicken And Onion Soup
Ingredients
- good broth made chiefly of veal knuckle
- 1 chicken or rabbit, cut into joints
- 4-5 medium onions, shredded fine
- 1 tbsp curry powder
- cayenne pepper for seasoning
Method
- 1 Prepare good broth using a veal knuckle. Once cold, skim off the fat and strain the liquid through a sieve.
- 2 Cut the chicken or rabbit into joints. Fry the meat well in a pan along with the shredded onions.
- 3 Sprinkle the curry powder over the frying meat and vegetables, then add them to the strained broth.
- 4 Simmer the soup for three hours. Serve hot with a seasoning of cayenne pepper.
