Curried Chicken And Apple Soup

Ingredients

  • 3 pints chicken stock
  • 1 cup diced apples
  • 4 onions, chopped fine
  • 1 carrot, diced
  • 1 clove
  • 1/2 teaspoon thyme
  • 4 tablespoons bacon fat
  • 1/2 cup flour
  • 1/2 teaspoon curry powder
  • 1 pint cold water
  • juice of 1/2 lemon
  • 1/2 cup finely chopped cooked chicken

Method

  1. 1 In a saucepan, combine chicken stock, diced apples, chopped onions, diced carrot, clove, and thyme. Simmer slowly for 30 minutes.
  2. 2 In a frying pan, heat bacon fat. Whisk in flour and curry powder to form a roux. Gradually whisk in cold water until smooth.
  3. 3 Pour the roux mixture into the simmering soup. Stir constantly to prevent lumps and bring to a boil. Cook for 10 minutes.
  4. 4 Strain the soup through cheesecloth. Stir in lemon juice and chopped chicken. Serve hot.
