Curried Chicken And Apple Soup
Ingredients
- 3 pints chicken stock
- 1 cup diced apples
- 4 onions, chopped fine
- 1 carrot, diced
- 1 clove
- 1/2 teaspoon thyme
- 4 tablespoons bacon fat
- 1/2 cup flour
- 1/2 teaspoon curry powder
- 1 pint cold water
- juice of 1/2 lemon
- 1/2 cup finely chopped cooked chicken
Method
- 1 In a saucepan, combine chicken stock, diced apples, chopped onions, diced carrot, clove, and thyme. Simmer slowly for 30 minutes.
- 2 In a frying pan, heat bacon fat. Whisk in flour and curry powder to form a roux. Gradually whisk in cold water until smooth.
- 3 Pour the roux mixture into the simmering soup. Stir constantly to prevent lumps and bring to a boil. Cook for 10 minutes.
- 4 Strain the soup through cheesecloth. Stir in lemon juice and chopped chicken. Serve hot.
