Curried Cauliflower Soup
Ingredients
- 4 tablespoons Crisco
- 1 head cauliflower
- 1 sliced onion
- 2 teaspoons curry powder
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1 cup stock or water
Method
- 1 Boil cauliflower in salted water until tender, then drain and divide into small florets.
- 2 Fry the sliced onion in Crisco for a few minutes.
- 3 Add curry powder, lemon juice, and stock or water to the pan.
- 4 Simmer the mixture for fifteen minutes, then strain into a clean saucepan.
- 5 Add the cauliflower and salt to the strained liquid and simmer for fifteen minutes.
- 6 Serve hot.
