Curried Catfish Stew

Ingredients

  • white channel catfish, heads removed, skinned, cleaned, and cut into 4-inch pieces
  • 1 quart water
  • 2 onions
  • chopped parsley
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 tsp curry powder

Method

  1. 1 Place catfish pieces, onions, and parsley in a stew pan with 1 quart of water. Stew gently until liquid reduces to ½ pint.
  2. 2 Remove fish and set aside on a dish, covering to keep warm.
  3. 3 In the remaining liquid, rub 1 tbsp butter into 1 tbsp flour. Stir in 1 tsp curry powder.
  4. 4 Thicken the gravy with the butter-flour mixture, shaking over heat for a few minutes until smooth. Pour over the fish.
