Curried Catfish Stew
Ingredients
- white channel catfish, heads removed, skinned, cleaned, and cut into 4-inch pieces
- 1 quart water
- 2 onions
- chopped parsley
- 1 tbsp butter
- 1 tbsp flour
- 1 tsp curry powder
Method
- 1 Place catfish pieces, onions, and parsley in a stew pan with 1 quart of water. Stew gently until liquid reduces to ½ pint.
- 2 Remove fish and set aside on a dish, covering to keep warm.
- 3 In the remaining liquid, rub 1 tbsp butter into 1 tbsp flour. Stir in 1 tsp curry powder.
- 4 Thicken the gravy with the butter-flour mixture, shaking over heat for a few minutes until smooth. Pour over the fish.
