Curried Brown Rice With Apricots And Spinach

Ingredients

  • 1 cup brown rice (short grain, uncooked)
  • 1 tablespoon olive oil
  • 2 garlic cloves, chopped
  • 1 medium red onion, peeled and finely chopped
  • 1 tablespoon curry powder
  • 2 cups fresh spinach, chopped
  • 2 cups low sodium vegetable broth
  • salt and pepper to taste
  • 1 cup dried apricots, chopped
  • 1/2 cup toasted pumpkin seeds

Method

  1. 1 Rinse the rice well.
  2. 2 Heat olive oil in a large heavy saucepan over medium heat.
  3. 3 Add onions and garlic; cook 3-4 minutes. Stir in curry powder.
  4. 4 Add rice and broth; bring to a boil over high heat.
  5. 5 Reduce heat, cover, and simmer 30-45 minutes until liquid is absorbed.
  6. 6 Remove from heat; stir in apricots and spinach. Cover and let sit 10 minutes.
  7. 7 Fluff with a fork. Stir in pumpkin seeds, salt, and pepper. Serve immediately.
