Curried Brown Rice With Apricots And Spinach
Ingredients
- 1 cup brown rice (short grain, uncooked)
- 1 tablespoon olive oil
- 2 garlic cloves, chopped
- 1 medium red onion, peeled and finely chopped
- 1 tablespoon curry powder
- 2 cups fresh spinach, chopped
- 2 cups low sodium vegetable broth
- salt and pepper to taste
- 1 cup dried apricots, chopped
- 1/2 cup toasted pumpkin seeds
Method
- 1 Rinse the rice well.
- 2 Heat olive oil in a large heavy saucepan over medium heat.
- 3 Add onions and garlic; cook 3-4 minutes. Stir in curry powder.
- 4 Add rice and broth; bring to a boil over high heat.
- 5 Reduce heat, cover, and simmer 30-45 minutes until liquid is absorbed.
- 6 Remove from heat; stir in apricots and spinach. Cover and let sit 10 minutes.
- 7 Fluff with a fork. Stir in pumpkin seeds, salt, and pepper. Serve immediately.
