Curried Anchovy And Egg Sandwiches

Ingredients

  • 3 tablespoons melted Crisco
  • 10 anchovies
  • 3 hard-cooked eggs
  • 2 tablespoons grated cheese
  • 1 teaspoon curry powder
  • 1/2 teaspoon lemon juice
  • Salt to taste
  • Brown bread
  • Watercress

Method

  1. 1 Bone the anchovies and place them in a basin or mortar with the eggs, cheese, and 1 tablespoon of Crisco.
  2. 2 Pound the mixture well together until smooth.
  3. 3 Mix the remaining 2 tablespoons of Crisco with the curry powder, lemon juice, and salt.
  4. 4 Cut thin slices of brown bread and spread with the curry mixture.
  5. 5 Layer the anchovy paste on the bread, top with another slice, and cut into shapes.
  6. 6 Arrange on a plate and garnish with watercress.
