Currant Tea Cake

Ingredients

  • 1 tbsp butter
  • 1 cup sugar
  • 1 egg, well-beaten
  • 3/4 cup milk
  • 3/4 cup currants or raisins, dredged with flour
  • 1 1/2 cups flour
  • 1 tsp baking powder

Method

  1. 1 Cream 1 tbsp butter with 1 cup sugar.
  2. 2 Add 1 well-beaten egg and 3/4 cup milk.
  3. 3 Add 3/4 cup currants or raisins dredged with flour.
  4. 4 Sift in 1 1/2 cups flour and 1 tsp baking powder.
  5. 5 Bake in a buttered tin or patty-pans.
