Currant Pancakes
Ingredients
- 4 oz all-purpose flour
- 1/2 pint milk
- 3 large eggs
- 2 oz currants
- Sugar and cinnamon to taste
- Butter for frying
Method
- 1 Pick and wash the currants, then set aside.
- 2 Whisk flour, milk, eggs, sugar, and cinnamon to make a smooth batter.
- 3 Fold the currants into the batter.
- 4 Heat butter in a skillet over medium heat.
- 5 Pour batter to form thin pancakes and fry until golden on both sides.
