  • 2 cups flour
  • 3 teaspoons baking powder
  • ½ cup sugar
  • ¾ teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons shortening
  • ½ cup currants

Method

  1. 1 Sift together flour, baking powder, sugar, and salt.
  2. 2 Add milk, well-beaten egg, and melted shortening; mix well.
  3. 3 Fold in currants that have been washed, dried, and floured.
  4. 4 Half-fill greased hot muffin tins with the stiff batter.
  5. 5 Bake in a hot oven (425°F) for about 20 minutes.
