Currant Muffins
Ingredients
- 2 cups flour
- 3 teaspoons baking powder
- ½ cup sugar
- ¾ teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoons shortening
- ½ cup currants
Method
- 1 Sift together flour, baking powder, sugar, and salt.
- 2 Add milk, well-beaten egg, and melted shortening; mix well.
- 3 Fold in currants that have been washed, dried, and floured.
- 4 Half-fill greased hot muffin tins with the stiff batter.
- 5 Bake in a hot oven (425°F) for about 20 minutes.
