Cumin Refried Pinto Beans
Ingredients
- 1 1/2 cups dry pinto beans, sorted and rinsed
- 2 garlic cloves, minced
- 1 tablespoon oil
- 1/4 cup chopped onion
- 1 teaspoon ground cumin
Method
- 1 Cook beans and reserve some cooking liquid before draining.
- 2 Sauté onions and garlic in oil until onions become clear, adding a little water if they stick.
- 3 Mash half of the beans and add them to the onion and garlic mixture.
- 4 Sauté for 10 minutes, stirring frequently, allowing some mashed beans to brown.
- 5 Add cumin, remaining beans, and enough reserved liquid to keep beans soft and mushy. Cook until warmed through.
