Cumin Refried Pinto Beans

Ingredients

  • 1 1/2 cups dry pinto beans, sorted and rinsed
  • 2 garlic cloves, minced
  • 1 tablespoon oil
  • 1/4 cup chopped onion
  • 1 teaspoon ground cumin

Method

  1. 1 Cook beans and reserve some cooking liquid before draining.
  2. 2 Sauté onions and garlic in oil until onions become clear, adding a little water if they stick.
  3. 3 Mash half of the beans and add them to the onion and garlic mixture.
  4. 4 Sauté for 10 minutes, stirring frequently, allowing some mashed beans to brown.
  5. 5 Add cumin, remaining beans, and enough reserved liquid to keep beans soft and mushy. Cook until warmed through.
