Cumin Oregano Black Beans

Ingredients

  • 2 cans black beans (15 ounce each)
  • 1 medium onion
  • 2 garlic cloves
  • 1/2 tablespoon vegetable oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • oregano (fresh or dried)

Method

  1. 1 Drain the juice from one can of black beans. Mash the drained beans with a potato masher until no longer whole, then set aside.
  2. 2 Chop the onion into 1/4-inch pieces and mince the garlic cloves finely. Set both aside.
  3. 3 Heat oil in a saucepan over medium-high heat. Sauté onions for 1-2 minutes, then stir in garlic and cumin for 30 seconds.
  4. 4 Add the mashed beans and the second can of beans with their juice. Bring to a boil, then reduce heat to low.
  5. 5 Stir in salt and oregano. Simmer uncovered for 10 minutes.
