Cumin Lime Black Bean Couscous Salad

Ingredients

  • 1/2 cup low-sodium chicken broth (or vegetable broth)
  • 1/2 cup uncooked couscous
  • 1 1/2 teaspoons apple cider vinegar
  • 1/2 teaspoon ground cumin
  • 1 tablespoon fresh lime juice (optional)
  • 1 can (15 oz) low-sodium black beans, drained and rinsed
  • 1/2 medium onion, minced
  • 1/2 red or green bell pepper, minced
  • 1 cup frozen corn, thawed (or 1/2 cup canned whole kernel corn)
  • 2 tablespoons chopped fresh cilantro (optional)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Method

  1. 1 Bring broth to a boil in a small pot. Stir in couscous, cover, remove from heat, and let stand for 5 minutes.
  2. 2 While couscous steeps, whisk together olive oil, vinegar, cumin, and lime juice in a large bowl.
  3. 3 Add black beans, onion, bell pepper, and corn to the dressing and toss to combine.
  4. 4 Fluff couscous with a fork, add to the bean mixture, and mix well.
  5. 5 Season with salt and pepper. Stir in cilantro if using, then serve.
