Cucumber Tomato Couscous Salad
Ingredients
- 2 cups cucumber, diced
- 1/4 cup tomato, seeded and diced
- 2 cups sweet onion, chopped
- 2 cups couscous or rice, cooked
- 1/2 teaspoon dill weed (dried or fresh, chopped)
- Italian salad dressing, low-fat
Method
- 1 Wash hands thoroughly.
- 2 In a large bowl, toss together the diced cucumbers, seeded tomatoes, chopped onions, cooked couscous (or rice), and chopped dill.
- 3 Add low-fat Italian salad dressing and mix well to combine.
- 4 Chill the salad in the refrigerator for 1 hour to allow flavors to meld.
- 5 Serve chilled.
