Cucumber Tomato Couscous Salad

Ingredients

  • 2 cups cucumber, diced
  • 1/4 cup tomato, seeded and diced
  • 2 cups sweet onion, chopped
  • 2 cups couscous or rice, cooked
  • 1/2 teaspoon dill weed (dried or fresh, chopped)
  • Italian salad dressing, low-fat

Method

  1. 1 Wash hands thoroughly.
  2. 2 In a large bowl, toss together the diced cucumbers, seeded tomatoes, chopped onions, cooked couscous (or rice), and chopped dill.
  3. 3 Add low-fat Italian salad dressing and mix well to combine.
  4. 4 Chill the salad in the refrigerator for 1 hour to allow flavors to meld.
  5. 5 Serve chilled.
