Cucumber Tomato And Cress Salad
Ingredients
- 1 pint cucumber, sliced or diced
- 3 tablespoons olive oil
- 1 tablespoon vinegar or lemon juice
- Fresh cress, washed and dried
- Tomatoes, peeled, chilled, and cut into pieces
- French, cream, or mayonnaise dressing (optional)
Method
- 1 Wash the cress thoroughly and shake it dry. Discard any coarse stems.
- 2 Arrange the cress as a bed on a serving dish.
- 3 Toss the sliced or diced cucumber with the oil and vinegar or lemon juice.
- 4 Place the dressed cucumber on top of the cress bed.
- 5 Arrange the peeled, chilled tomato pieces on top of the cucumber.
- 6 Serve immediately with French, cream, or mayonnaise dressing on the side.
