Cucumber Tea Sandwiches
Ingredients
- cucumbers, sliced very thin
- ice water
- 3 tbsp olive oil
- 1 tbsp vinegar
- 1/8 tsp salt
- dash of pepper
- thin slices of bread
- butter
Method
- 1 Slice cucumbers very thin and soak in ice water for 1-2 hours until crisp and brittle.
- 2 Beat olive oil, vinegar, salt, and pepper together. Chill on ice until the dressing thickens.
- 3 Drain and dry cucumbers on a napkin. Butter bread slices and layer with cucumbers.
- 4 Sprinkle dressing over cucumbers, top with another buttered bread slice, and press together.
- 5 Trim crusts and cut into triangles. Serve immediately.
