Cucumber Tea Sandwiches

Cucumber Tea Sandwiches

Ingredients

  • cucumbers, sliced very thin
  • ice water
  • 3 tbsp olive oil
  • 1 tbsp vinegar
  • 1/8 tsp salt
  • dash of pepper
  • thin slices of bread
  • butter

Method

  1. 1 Slice cucumbers very thin and soak in ice water for 1-2 hours until crisp and brittle.
  2. 2 Beat olive oil, vinegar, salt, and pepper together. Chill on ice until the dressing thickens.
  3. 3 Drain and dry cucumbers on a napkin. Butter bread slices and layer with cucumbers.
  4. 4 Sprinkle dressing over cucumbers, top with another buttered bread slice, and press together.
  5. 5 Trim crusts and cut into triangles. Serve immediately.
