Cucumber Olive Egg Salad

Ingredients

  • 3 cucumbers, diced
  • 1 cup finely chopped olives
  • 3 hard-boiled eggs
  • ¾ cup broken pecans or English walnuts
  • Lettuce leaves
  • Mayonnaise
  • Pickled nasturtium seeds or French peas (optional)

Method

  1. 1 Dice the cucumbers and finely chop the olives.
  2. 2 Chop the hard-boiled eggs and break the nuts into small pieces.
  3. 3 Combine cucumbers, olives, eggs, and nuts in a bowl.
  4. 4 Toss gently with mayonnaise until coated.
