Cucumber Olive Egg Salad
Ingredients
- 3 cucumbers, diced
- 1 cup finely chopped olives
- 3 hard-boiled eggs
- ¾ cup broken pecans or English walnuts
- Lettuce leaves
- Mayonnaise
- Pickled nasturtium seeds or French peas (optional)
Method
- 1 Dice the cucumbers and finely chop the olives.
- 2 Chop the hard-boiled eggs and break the nuts into small pieces.
- 3 Combine cucumbers, olives, eggs, and nuts in a bowl.
- 4 Toss gently with mayonnaise until coated.
- 5 Serve on a bed of lettuce, adding pickled nasturtium seeds or peas if desired.
