Cucumber Corn Tomato Salad
Ingredients
- 1 cup cucumber, chopped with peel
- 1 can (8.75 oz) corn, drained
- 1 can (16 oz) low-sodium stewed tomatoes
- 1/8 cup red pepper, chopped
- 1/8 cup green pepper, chopped
- 2 tablespoons red wine vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried cilantro or coriander
- 1/8 teaspoon ground black pepper
Method
- 1 Combine all ingredients in a large bowl.
- 2 Mix well to distribute flavors evenly.
- 3 Serve cold as a salad or side dish.
