Cubed Potato Nasturtium Salad
Ingredients
- 1 quart potatoes, cut into cubes
- ½ cup chopped gherkins
- 1 cup tender nasturtium shoots, cut into bits
- 2 tablespoonfuls pickled nasturtium seeds
- Garlic (for rubbing bowl)
- 6 tablespoonfuls oil
- 5 tablespoonfuls vinegar
- Salt and pepper to taste
- Chopped parsley
Method
- 1 Rub a large bowl with a cut garlic clove.
- 2 Combine the cubed potatoes, chopped gherkins, nasturtium shoots, and pickled nasturtium seeds in the bowl.
- 3 Add the oil, vinegar, salt, and pepper, then toss gently to mix.
- 4 Mound the salad on a serving dish and garnish with chopped parsley and a wreath of nasturtium blossoms and leaves.
