Cubed Potato Nasturtium Salad

Ingredients

  • 1 quart potatoes, cut into cubes
  • ½ cup chopped gherkins
  • 1 cup tender nasturtium shoots, cut into bits
  • 2 tablespoonfuls pickled nasturtium seeds
  • Garlic (for rubbing bowl)
  • 6 tablespoonfuls oil
  • 5 tablespoonfuls vinegar
  • Salt and pepper to taste
  • Chopped parsley

Method

  1. 1 Rub a large bowl with a cut garlic clove.
  2. 2 Combine the cubed potatoes, chopped gherkins, nasturtium shoots, and pickled nasturtium seeds in the bowl.
  3. 3 Add the oil, vinegar, salt, and pepper, then toss gently to mix.
  4. 4 Mound the salad on a serving dish and garnish with chopped parsley and a wreath of nasturtium blossoms and leaves.
