Crystallized Ginger Candies

Ingredients

  • 3 level tablespoons gelatin
  • ½ cup cold water
  • 2 cups sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 2/3 cup crystallized ginger, cut into tiny bits
  • Granulated sugar for rolling

Method

  1. 1 Soak gelatin in ½ cup cold water for one hour.
  2. 2 Combine 2 cups sugar and 1 cup water in a saucepan; bring to a boil and cook for 5 minutes.
  3. 3 Add the soaked gelatin to the syrup and stir to dissolve thoroughly.
  4. 4 Bring the mixture to a boil again and cook for 12 minutes.
  5. 5 Remove from heat and stir in 1 tablespoon lemon juice and 2/3 cup chopped crystallized ginger.
  6. 6 Rinse an oblong pan with cold water, drain, and pour in the mixture.
  7. 7 Set in a cool place for 12 hours until firm.
  8. 8 Remove from pan, cut into blocks, roll in granulated sugar, and let stand to crystallize.
