Crystallized Ginger Candies
Ingredients
- 3 level tablespoons gelatin
- ½ cup cold water
- 2 cups sugar
- 1 cup water
- 1 tablespoon lemon juice
- 2/3 cup crystallized ginger, cut into tiny bits
- Granulated sugar for rolling
Method
- 1 Soak gelatin in ½ cup cold water for one hour.
- 2 Combine 2 cups sugar and 1 cup water in a saucepan; bring to a boil and cook for 5 minutes.
- 3 Add the soaked gelatin to the syrup and stir to dissolve thoroughly.
- 4 Bring the mixture to a boil again and cook for 12 minutes.
- 5 Remove from heat and stir in 1 tablespoon lemon juice and 2/3 cup chopped crystallized ginger.
- 6 Rinse an oblong pan with cold water, drain, and pour in the mixture.
- 7 Set in a cool place for 12 hours until firm.
- 8 Remove from pan, cut into blocks, roll in granulated sugar, and let stand to crystallize.
