Crustless Pumpkin Pie
Ingredients
- 3/4 cup sugar
- 1/2 cup Master Mix
- 2 tablespoons vegetable oil
- 1 can (13 oz) nonfat evaporated milk
- 2 eggs
- 1 can (16 oz) pumpkin
- 3 1/2 teaspoons pumpkin pie spice
- 2 teaspoons vanilla extract
Method
- 1 Preheat oven to 350°F and lightly grease a 9 or 10-inch pie plate.
- 2 Combine all ingredients in a medium mixing bowl or blender.
- 3 Beat with a mixer for 2 minutes until smooth, or blend on high for 1 minute.
- 4 Pour the mixture into the prepared pie plate.
- 5 Bake for 50-55 minutes, or until a knife inserted in the center comes out clean.
- 6 Cool slightly, refrigerate, and serve with whipped topping or ice cream.
