Crustless Pumpkin Pie

Ingredients

  • 3/4 cup sugar
  • 1/2 cup Master Mix
  • 2 tablespoons vegetable oil
  • 1 can (13 oz) nonfat evaporated milk
  • 2 eggs
  • 1 can (16 oz) pumpkin
  • 3 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla extract

Method

  1. 1 Preheat oven to 350°F and lightly grease a 9 or 10-inch pie plate.
  2. 2 Combine all ingredients in a medium mixing bowl or blender.
  3. 3 Beat with a mixer for 2 minutes until smooth, or blend on high for 1 minute.
  4. 4 Pour the mixture into the prepared pie plate.
  5. 5 Bake for 50-55 minutes, or until a knife inserted in the center comes out clean.
  6. 6 Cool slightly, refrigerate, and serve with whipped topping or ice cream.
