Crispy Tortilla Huevos Rancheros

Ingredients

  • 4 corn tortillas (6 inch)
  • 1/2 tablespoon vegetable oil
  • 4 egg whites
  • 4 whole eggs (medium)
  • 1/8 teaspoon black pepper
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 2 cups fresh salsa

Method

  1. 1 Preheat oven to 450°F. Brush tortillas with oil and bake on a sheet for 5-10 minutes until crisp.
  2. 2 Spray skillet with cooking spray over medium heat. Cook egg whites, then top with whole eggs. Cook 2-3 minutes per side.
  3. 3 Place one egg on each tortilla. Top with cheese and broil for 2 minutes until melted.
  4. 4 Serve with fresh salsa spooned around the edge of each shell.
