Crispy Tortilla Huevos Rancheros
Ingredients
- 4 corn tortillas (6 inch)
- 1/2 tablespoon vegetable oil
- 4 egg whites
- 4 whole eggs (medium)
- 1/8 teaspoon black pepper
- 1 cup shredded cheddar or Monterey Jack cheese
- 2 cups fresh salsa
Method
- 1 Preheat oven to 450°F. Brush tortillas with oil and bake on a sheet for 5-10 minutes until crisp.
- 2 Spray skillet with cooking spray over medium heat. Cook egg whites, then top with whole eggs. Cook 2-3 minutes per side.
- 3 Place one egg on each tortilla. Top with cheese and broil for 2 minutes until melted.
- 4 Serve with fresh salsa spooned around the edge of each shell.
