Crispy Spinach Fritters
Ingredients
- 1 cup cold boiled spinach
- 1 egg yolk
- 1 tablespoon rice flour
- 1 teaspoon powdered sugar
- Vegetable oil for frying
Method
- 1 In a bowl, mix the cold boiled spinach, egg yolk, rice flour, and powdered sugar until thickly combined.
- 2 Heat vegetable oil in a skillet until hot but not smoking.
- 3 Drop spoonfuls of the spinach mixture into the hot oil.
- 4 Fry until golden brown and puffed, then drain quickly on paper towels.
- 5 Serve immediately while very hot.
