Crispy Salt Pork With Pan Gravy
Ingredients
- 1 piece fat salt pork with streaks of lean
- Hot water for scalding
- Flour for thickening
- Cold water for moistening flour
- Hot water for gravy
Method
- 1 Cut the rind from the salt pork and slice it thin. Scald the slices in hot water.
- 2 Heat a frying pan until smoking hot. Add the pork slices and fry until crisp without scorching.
- 3 Remove the pork slices from the pan and pour off nearly all the fat.
- 4 Moisten flour with cold water, then stir it into hot water in the pan to create a thickened gravy.
