Crispy Salt Pork With Pan Gravy

Ingredients

  • 1 piece fat salt pork with streaks of lean
  • Hot water for scalding
  • Flour for thickening
  • Cold water for moistening flour
  • Hot water for gravy

Method

  1. 1 Cut the rind from the salt pork and slice it thin. Scald the slices in hot water.
  2. 2 Heat a frying pan until smoking hot. Add the pork slices and fry until crisp without scorching.
  3. 3 Remove the pork slices from the pan and pour off nearly all the fat.
  4. 4 Moisten flour with cold water, then stir it into hot water in the pan to create a thickened gravy.
