Crispy Potato Nests With Fried Fish

Ingredients

  • Potatoes, peeled and sliced into thin strips
  • Cold water for soaking
  • Vegetable oil for deep frying
  • Salt to taste
  • Small fillets of fried fish or smelts

Method

  1. 1 Wash, peel, and slice potatoes into thin strips. Soak in cold water for 15 minutes, then drain and dry thoroughly between towels.
  2. 2 Line a 4-inch wire strainer with potato strips. Place a 2.5-inch strainer inside to hold the potatoes in a nest shape.
  3. 3 Fry the strainers in deep fat over medium heat. Keep the inner strainer in place with a long-handled spoon until golden and crisp.
  4. 4 Remove nests from strainers and drain on brown paper. Sprinkle with salt and fill with small fillets of fried fish or smelts.
