Crispy Potato Croquettes

Ingredients

  • 2 lb potatoes
  • 2 oz butter
  • 2 eggs
  • Pepper and salt
  • White bread crumbs

Method

  1. 1 Boil potatoes and rub them through a wire sieve.
  2. 2 Mash potatoes with butter, pepper, and salt. Mix in one beaten egg.
  3. 3 Lightly flour hands and form mixture into balls or shapes.
  4. 4 Brush croquettes with beaten egg and cover with bread crumbs.
  5. 5 Mold gently to adhere crumbs, then fry in hot fat until golden.
  6. 6 Garnish with fried parsley and serve.
