Crispy Potato Croquettes
Ingredients
- 2 lb potatoes
- 2 oz butter
- 2 eggs
- Pepper and salt
- White bread crumbs
Method
- 1 Boil potatoes and rub them through a wire sieve.
- 2 Mash potatoes with butter, pepper, and salt. Mix in one beaten egg.
- 3 Lightly flour hands and form mixture into balls or shapes.
- 4 Brush croquettes with beaten egg and cover with bread crumbs.
- 5 Mold gently to adhere crumbs, then fry in hot fat until golden.
- 6 Garnish with fried parsley and serve.
