Crispy Pan Fried Potatoes

Ingredients

  • potatoes (boiled or raw)
  • butter
  • flour (optional)
  • hot fat for frying

Method

  1. 1 Slice cold boiled potatoes or cut raw potatoes into shapes. If using raw, soak in cold water for 30 minutes, then dry thoroughly.
  2. 2 For boiled potatoes, melt butter in a sauté pan and cook potatoes until browned on both sides. Optionally roll in flour for a crisp crust.
  3. 3 For fried potatoes, immerse dried potatoes in hot fat in batches. Fry until amber colored and crisp.
  4. 4 Drain fried potatoes on paper towels. Keep warm in a low oven until ready to serve.
  5. 5 Serve immediately while hot and crisp.
