Crispy Pan Fried Potatoes
Ingredients
- potatoes (boiled or raw)
- butter
- flour (optional)
- hot fat for frying
Method
- 1 Slice cold boiled potatoes or cut raw potatoes into shapes. If using raw, soak in cold water for 30 minutes, then dry thoroughly.
- 2 For boiled potatoes, melt butter in a sauté pan and cook potatoes until browned on both sides. Optionally roll in flour for a crisp crust.
- 3 For fried potatoes, immerse dried potatoes in hot fat in batches. Fry until amber colored and crisp.
- 4 Drain fried potatoes on paper towels. Keep warm in a low oven until ready to serve.
- 5 Serve immediately while hot and crisp.
