Crispy Lemon Mashed Potato Croquettes
Ingredients
- 2 cups mashed potatoes
- ½ cup milk
- 1 lemon, zested
- 1 tsp sugar
- ¼ tsp salt
- 1 egg yolk
- 1 cup breadcrumbs
Method
- 1 Boil potatoes until tender, then drain and mash with milk, lemon zest, sugar, and salt until thick.
- 2 Allow the potato mixture to cool completely, then roll into 10-12 egg-sized balls.
- 3 Dip each ball in egg yolk, then coat thoroughly in breadcrumbs mixed with a pinch of salt.
- 4 Repeat the egg and breadcrumb coating for a second layer to ensure a crisp crust.
- 5 Fry in hot oil until golden brown and serve immediately with fried parsley.
