Crispy Lemon Mashed Potato Croquettes

Ingredients

  • 2 cups mashed potatoes
  • ½ cup milk
  • 1 lemon, zested
  • 1 tsp sugar
  • ¼ tsp salt
  • 1 egg yolk
  • 1 cup breadcrumbs

Method

  1. 1 Boil potatoes until tender, then drain and mash with milk, lemon zest, sugar, and salt until thick.
  2. 2 Allow the potato mixture to cool completely, then roll into 10-12 egg-sized balls.
  3. 3 Dip each ball in egg yolk, then coat thoroughly in breadcrumbs mixed with a pinch of salt.
  4. 4 Repeat the egg and breadcrumb coating for a second layer to ensure a crisp crust.
  5. 5 Fry in hot oil until golden brown and serve immediately with fried parsley.
