Crispy Grated Potato Cakes
Ingredients
- 8 large potatoes, peeled and grated
- 1 onion, grated
- 2-3 eggs
- Plenty of hot fat for frying
Method
- 1 Peel and grate the potatoes and onion. Immediately mix them with the eggs to prevent discoloration.
- 2 Heat a skillet with plenty of fat until very hot.
- 3 Drop the mixture into 3-inch flat cakes and fry until crisp and brown on one side.
- 4 Turn and fry the second side until brown. Serve immediately with apple sauce or stewed fruit.
