Crispy Grated Potato Cakes

Ingredients

  • 8 large potatoes, peeled and grated
  • 1 onion, grated
  • 2-3 eggs
  • Plenty of hot fat for frying

Method

  1. 1 Peel and grate the potatoes and onion. Immediately mix them with the eggs to prevent discoloration.
  2. 2 Heat a skillet with plenty of fat until very hot.
  3. 3 Drop the mixture into 3-inch flat cakes and fry until crisp and brown on one side.
  4. 4 Turn and fry the second side until brown. Serve immediately with apple sauce or stewed fruit.
