Crispy Fried Whitebait With Lemon
Ingredients
- whitebait
- flour
- cooking fat
- salt
- lemon quarters
Method
- 1 Wash whitebait carefully and dry thoroughly by rubbing with a napkin.
- 2 Just before cooking, roll the fish in flour to cover completely, then shake off excess on a sieve.
- 3 Fry in smoking hot fat in a single layer for about one minute until light amber and crisp.
- 4 Remove and drain on paper, then sprinkle with salt.
- 5 Serve immediately on a warm dish with folded napkin, accompanied by lemon quarters.
