Crispy Fried Sole
Ingredients
- 2 soles (3/4 to 1 lb each)
- 1 tbsp vinegar
- 1 egg yolk, lightly beaten with a little white
- 1/4 lb fine dry breadcrumbs
- 2 oz flour
- 1 tsp salt
- 1/2 tsp pepper
- Plenty of fat for frying
Method
- 1 Scrape and wipe the soles. Do not skin them to preserve flavor and nourishment.
- 2 Place fish in vinegar for at least one hour (or overnight) to improve flavor. Rinse and dry thoroughly in a cloth.
- 3 Mix breadcrumbs, flour, salt, and pepper on a plate. Dip fish in beaten egg, then coat evenly in the breadcrumb mixture.
- 4 Heat fat in a pan until hot enough to brown bread instantly. Fry fish black-side down for 4 minutes.
- 5 Turn fish white-side down and fry for 3 more minutes. Drain on paper towels to remove excess grease.
- 6 Serve immediately with melted butter if desired.
