Crispy Fried Sole

Ingredients

  • 2 soles (3/4 to 1 lb each)
  • 1 tbsp vinegar
  • 1 egg yolk, lightly beaten with a little white
  • 1/4 lb fine dry breadcrumbs
  • 2 oz flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • Plenty of fat for frying

Method

  1. 1 Scrape and wipe the soles. Do not skin them to preserve flavor and nourishment.
  2. 2 Place fish in vinegar for at least one hour (or overnight) to improve flavor. Rinse and dry thoroughly in a cloth.
  3. 3 Mix breadcrumbs, flour, salt, and pepper on a plate. Dip fish in beaten egg, then coat evenly in the breadcrumb mixture.
  4. 4 Heat fat in a pan until hot enough to brown bread instantly. Fry fish black-side down for 4 minutes.
  5. 5 Turn fish white-side down and fry for 3 more minutes. Drain on paper towels to remove excess grease.
  6. 6 Serve immediately with melted butter if desired.
