  • Egg
  • Bread-crumbs
  • Parsley
  • Hot fat for frying
  • Melted butter or suitable sauce

Method

  1. 1 Dry the smelts well and fix their tails in their mouths.
  2. 2 Cover the smelts with egg and bread-crumbs.
  3. 3 Fry them in hot fat until golden brown.
  4. 4 Garnish with fried parsley and serve with melted butter or sauce.
