Crispy Fried Oysters

Ingredients

  • Oysters, drained
  • Cracker crumbs
  • 1 egg, beaten with a little milk
  • Salt and pepper to taste

Method

  1. 1 Drain the oysters thoroughly.
  2. 2 Roll each oyster in cracker crumbs, then in the egg and milk mixture, and finally back in the cracker crumbs to coat well.
  3. 3 Heat fat in a deep fryer until smoking hot.
  4. 4 Place oysters in a wire basket and immerse in the hot fat.
  5. 5 Fry until they assume a light-amber color, then drain immediately and serve hot.
