Crispy Fried Oysters
Ingredients
- Oysters, drained
- Cracker crumbs
- 1 egg, beaten with a little milk
- Salt and pepper to taste
Method
- 1 Drain the oysters thoroughly.
- 2 Roll each oyster in cracker crumbs, then in the egg and milk mixture, and finally back in the cracker crumbs to coat well.
- 3 Heat fat in a deep fryer until smoking hot.
- 4 Place oysters in a wire basket and immerse in the hot fat.
- 5 Fry until they assume a light-amber color, then drain immediately and serve hot.
