Crispy Fried Mussels With Orange Butter
Ingredients
- fresh mussels, cleaned
- water
- salt
- all-purpose flour
- butter
- orange juice
- parsley
- sage
- chervil
- orange slices
Method
- 1 Bring enough water to cover the mussels to a boil. Add salt and the cleaned mussels. Boil until the shells open.
- 2 Remove mussels from shells. Discard any that did not open. Remove beards and rinse in warm water. Pat dry thoroughly.
- 3 Dredge the mussels in flour. Fry in hot oil until crisp and golden brown. Drain on paper towels.
- 4 Serve immediately with melted butter, orange juice, and fried parsley, sage, chervil, or orange slices.
