Crispy Fried Mussels With Orange Butter

Ingredients

  • fresh mussels, cleaned
  • water
  • salt
  • all-purpose flour
  • butter
  • orange juice
  • parsley
  • sage
  • chervil
  • orange slices

Method

  1. 1 Bring enough water to cover the mussels to a boil. Add salt and the cleaned mussels. Boil until the shells open.
  2. 2 Remove mussels from shells. Discard any that did not open. Remove beards and rinse in warm water. Pat dry thoroughly.
  3. 3 Dredge the mussels in flour. Fry in hot oil until crisp and golden brown. Drain on paper towels.
  4. 4 Serve immediately with melted butter, orange juice, and fried parsley, sage, chervil, or orange slices.
