Crispy Fried Egg Noodles

Ingredients

  • 1 egg
  • ½ teaspoon salt
  • Flour (enough for stiff dough)
  • 1 pint salad oil

Method

  1. 1 Beat egg with salt, then add flour to form a very stiff dough.
  2. 2 Knead dough, roll as thin as possible, and dust with flour.
  3. 3 Fold dough into layers about 2 inches wide, then slice very thin.
  4. 4 Shake strips apart and fry in salad oil until delicately brown.
  5. 5 Drain fried noodles on soft paper.
