Crispy Fried Egg Noodles
Ingredients
- 1 egg
- ½ teaspoon salt
- Flour (enough for stiff dough)
- 1 pint salad oil
Method
- 1 Beat egg with salt, then add flour to form a very stiff dough.
- 2 Knead dough, roll as thin as possible, and dust with flour.
- 3 Fold dough into layers about 2 inches wide, then slice very thin.
- 4 Shake strips apart and fry in salad oil until delicately brown.
- 5 Drain fried noodles on soft paper.
